October 2009- Recipe of the Month- Scarecrow Theme

This month we have a wonderful fruit scarecrow salad that will have the children enjoying a variety of fruits while you talk about autumn and scarecrows!

Scarecrow Fruit Salad

 

Ingredients:

Cantaloupe
Dried cranberries (cut in half)
Cherry half
Raisins
Red lettuce leaf

Utensils Needed:

Ice Cream Scoop
Knife
Plate

Directions:

Wash and dry hands.
Have an adult cut the cantaloupe in half.  Scoop out seeds.
Using the Ice Cream Scoop, Scoop out half circles of cantaloupe and place on the plate. (1 cantaloupe should give you at last 8 half circles).
Place half a cherry where the nose would be.
Put the mouth and eyes of the scarecrow on, using raisins and dried cranberries.
Fold a lettuce leaf in half and then quarters and put it where the scarecrow's hat would be.
Serve. Watch for smiles as the children enjoy the different fruit flavors.

* Shredded cheese can be added for hair, or the fringe below the scarecrow's face, if desired. If cantaloupe is no longer available in your area, canned peach halves can be used. Other fruits and nuts can be substituted for facial features, and fruit roll-ups can be cut into a hat shape, if children do not like lettuce.
