May 2009 Recipe of the Month- Butterfly Theme

We have created a lunch every child will enjoy making and eating!  We used cream cheese and jelly as the filling, but you can use whatever the child loves eating-peanut butter and jelly, tuna, egg salad, lunch meats, etc.



Ingredients Needed:

Rod Pretzel or carrot or celery stick
Tortilla- preferably a colored one
Filling- we used cream cheese and jelly
Small pieces of licorice or green peppers or carrots
2 small raisins, dried cherries or currants

Utensils Needed:

Knife
Cutting Board
Plate

Directions:

Wash and Dry hands.
Spread the tortilla wrap with the filling.
Roll up the tortilla fairly tight.
Cut the roll into 1" pieces.
Place the pretzel rod or veggie stick in the center of the plate, this is the body of the butterfly.
Add pieces of the wrap for the wings.
Decorate with the licorice or slivers of veggies for the antennae and top off with the dried fruit.
Serve and look for the smiles!
