March 2008-Recipes of the Month-Lions and Lambs-
The children will have a great time creating our LION SALAD and are LAMB COOKIES. These are easy to prepare and a great way to SPRING into MARCH.
LION SALAD

Ingredients Needed:
1/2-3/4" Circular slice of a peeled (whole) orange
3 chocolate chips
2 raisins
1/4-1/2 a cherry
1/2 slice white cheese cut into strips
1/2 slice of yellow cheese cut into strips.
Items Needed:
Plate
Knife
Cutting Board
Plate
Directions:
1. Wash and dry hands.
2. Place orange slice in center of plate.
3. Surround Orange round with cheese strips to look like lion's mane.
4. Add raisins for the eyes.
5. Add chocolate chips for the ears and nose.
6. Add the cherry slice for the mouth.
7. Serve and DEVOUR the lion!
* a half canned peach place round slice up can be substituted for the orange slice. Pretzel sticks can be substituted for the cheese and nuts or other small fruits like blueberries can be substituted for the facial features.
LAMB COOKIES

Ingredients Needed:
Round cookie
White frosting
1 chocolate chip for nose
2 mini candy coated chocolates or two green mint chips for eyes
1 Tootsie Roll cut in half lengthwise and pinched at one end for "ears"
Items needed:
plate
knife for spreading
Directions:
1. Wash and dry hands.
2. Place cookie on plate.
3. Frost Cookie with white frosting.
4. Place chocolate chip in middle for the nose.
5. Place candy coated chocolates or mint chips where eyes would go.
6. Put Tootsie Roll pieces where ears on the lamb would be.
7. Serve.
*Mini Marshmallows can also be placed around on the frosting to give the lamb a "fluffy" look. Steps 3 on can also be done to plain cupcakes. OR cut toast into rounds and spread with softened cream cheese and use raisins and nuts to make the face for a LAMB SANDWICH.
