July 2010, Recipes of the Month, Logging ON or Branching OUT!

Since we are logging in this month, the children will enjoy rolling out their very own branches.

Logged On Sandwich

Ingredients Needed:

Slice of Wheat Bread
Filling- peanut or nut butter, cheese spreads, tuna
Mint leaves or other edible leaves (celery, basil, oregano)

Utensils Needed:

Plate
Knife
Rolling Pin
Cutting Board

Directions:

Wash and Dry Hands.
Put a slice of bread on the cutting board.
Roll the bread out to a thin rectangle.
Spread the rectangle with a thin layer of filling.
Roll the bread up to form a "log"
Cut off a small piece of the end of the log, and place along the side of the main log.
Add leaves as desired.
Serve!
*To make a quicker log, change out the bread for a tortilla, which eliminates the rolling part of making the sandwich.

Sweet Snack Log

Ingredients Needed:

2 ounces cream cheese
1 tablespoon chopped pecans
Cocoa powder
Crackers

Utensils Needed:

Zip-lock bag
Knife
Cutting board
Spoon
Plate

Directions:

Wash and dry hands.
Place the cream cheese and pecans in the zip-lock bag and knead until well mixed.
Refrigerate until slightly firm, about 30 minutes.
Sprinkle some of the cocoa powder on the cutting board.
Take the cheese out of the bag and roll between palms to form a log shape.
Roll lightly in the cocoa powder and place the log on the plate.
Use the knife to slice off coins of cheese from the log.
Serve the log coins on the crackers.
