August 2010-Recipe of the Month- Potato Day is August 19th
Even the finickiest eater will LOVE these pizza potatoes. Children will usually try a food item that they have made themselves. This recipe is great to work on cutting skills, or pinch grasp needed for tearing. Italics means an adult needs to do this step of the recipe.
Pizza Potato

Ingredients Needed:
Baking Potatoes
1 jar of Marinara Sauce
Mozzarella Cheese (block or shredded)
Fresh Basil Leaves
Equipment Needed:
Microwave oven
Plate
Cutting Board
Dish towel
Knife
Spoon
Plate
Potholder
Directions:
Wash and dry the potatoes with the towel.
Place potatoes in the microwave and cook the appropriate time for potatoes.
Let cool.
Cut a potato in half on the cutting board, and move to a microwave safe plate.
Spoon marinara sauce on the potato halves.
Cut a slice of mozzarella off the block, and then cut or tear into small pieces. Place pieces on top of marinara.
(if using shredded cheese, just put a handful of cheese on the marinara sauce).
Cut or tear the basil into small pieces. Sprinkle basil over the cheese.
Place the plate back in the microwave. Microwave on high for 30 seconds.
Remove from microwave with the potholder and let the pizza potatoes cool slightly before serving.
