August 2007 Recipe of the Month- Berry Good Jam-- The grandchildren and
I were walking in the woods and stumbled upon a bunch of blackberry
bushes. We had a ball picking about a pint of the bright purple
berries! When we got home they wanted to make jam. Since we
only had a pint of these little gems, we added some store-bought
strawberries to our "find" and got out a package of the new NO COOK
Sure Jell Jam Pectin. If you have not seen this product, this is
a must! You can find it at www.surejell.com or by calling
1-800-437-3284. The grands and I have been "canning" jam for
years, but this was so easy and the results were wonderful. ANYONE can
do this and the kids will love eating what they created!
Berry Good Jam

Ingredients Needed:
2 cups chopped berries (raspberries, strawberries, blueberries or blackberries)
1 cup sugar
1 envelope of No Cook Sure Jell Jam Pectin
1/2 cup hot water
Equipment Needed:
measuring cups
blender or masher
large bowl
canning jar or small empty clean baby food jars
large spoon
knives
cutting board
Directions:
1. Pick berries in the woods or on a pick-your-own farm-or purchase in containers from grocery store.
2. Wash berries.
3. Cut berries into chunks and put in blender and blend until
smooth, and then pour the 2 cups into a bowl. Or put chopped
fruit in a bowl and mash with a masher until finely mashed and
juicy.
4. Add the 1 cup sugar and stir until very well mixed. Let mix set for 15 minutes, stirring occasionally.
5. In a measuring cup combine 1/2 cup hot water with the Sure Jell, stirring constantly until dissolved.
6. Add the Sure Jell mix to the fruit mix and stir together for 3 minutes.
7. Ladle or pour into jars and seal jars with lids.
8. Refrigerate for 24 hours before serving. This jam will last
for 3 weeks in the refrigerator or up to 1 year if frozen (do not
freeze in glass jars, freeze in plastic containers with lids). Makes 1
3 pound jar, 3 1 pound jars or 8-12 baby food jars of jam!
